We didn't end up snorkeling or many other activities as we had already done so much of it at Amanpulo and just wanted to relax here. There's the usual non motorized activities that are free, kayak, paddle boarding, etc...jet skis and seabobs are chargeable. $100 for 30 mins and $95 for 15 mins, respectively. You can of course take boats out for a variety of other activities. Water isn't the most clear I've seen so that could impact snorkeling. But we did see decent amount of sea life when we used the glass kayak.

As per the hotel reservations, the seaplane transfer fees can be paid upon check-out unless you choose to contact property to have it paid prior to your arrival.

A few notes here, based on our experience, the total cost is a bit exaggerated. We were there for 8 days in July. We paid for everything using points (however, take note that you can't actually pay for the seaplane transfer using points anymore-- they had originally told us that we could, so they honored that for us as an exception).
We didnt skimp on food/drink, either. We had the free breakfast as platinums, and usually, a pizza in the afternoon was all we needed to feel full after that. We still ate dinner most nights, too. The only cash I paid at the end of our stay was for the green tax.
Our food and beverage/spa total for the 8 days was something like $2200 or so for my wife and me.

Correction: Went back to my invoice and I actually redeemed for about $2,700 for 8 days of Food, Beverage, Spa, and Seaplane. Your math is right, though. My redemption for that was around 204K points.

St Regis Maldives award reservation
I was told by one of my friend that the Cat7 St Regis Maldives can be booked with 30K point per night for the 1500 sqm three bedroom villa on Aug 27. I quickly searched with the app and only found that the 540 sqm two-bedroom villa can be booked at 30K point per night for the desired date of my travel. I then made 5-day reservation and got the point deducted right away and had the reservation number in my app.
I just got the email from the hotel directly and told me that the rate is a mistake and they would either cancel the reservation or made the 20% off the best available rate for me.
My question is: is this kind of so-called mistake is good excuse for them to cancel the reservation or change my reservation to another rate? How should I reply this email? The email said they will cancel the reservation if I do not reply by Sept 15.
I meant to consult a lawyer for this case. But I would like to get some advice here before I make further step.

Since the resort is handling this issue, I would not recommend contacting customer service (or us) as they (we) have been told to refer anyone back to them.

St. Regis Maldives has limited participation in SPG, and all rooms are suites or villas. This means there are no standard rooms at Cat 7 30K points per night.
Award stays cannot be booked online. So the 30K points per night reservation is definitely a mistake.

On the way back I will be staying the night in CMB and I have the option of a 1525 or a 2045 flight out. I would like to optimise the time at St Regis so was wondering if I book the 2045 what time would I leave? I know it depends on the days sea plane schedule but anyone have any data points?
I would hate to be booked on the 2045 only to have to get the 12pm departure to MLE. But I guess if I am on the 1525 then they would get me out on the first flight out right? What time is that?

Well it seems the Lurker has made it clear that Corporate isn't going to get involved. That being said, it seems you can still negotiate with the property. You likely won't get that mistake award booking but you can probably do better than 20% off. Just keep calm and explain that you made commitments (like air tickets) based on the reservation and that it would only be fair if they made further concessions then see what happens.
