Bartolotta at Wynn
Was looking through the Wynn website last night and noticed that at the restaurant Bartolotta there are cabanas outside next to a lagoon for private dining. Anyone ever eat at one of these? Can they just be reserved? Any special things you need to do to get one?

I never have but I would call ahead to the concierge at the hotel or just try booking directly with the restaurant.
Bartolotta is so expensive, even for Wynn, that I can't imagine many people are booking cabanas these days.
Last time I was there we got charged $400 for a fish. Granted it was a big fish and quite good (and plucked out of the Mediterranean sea a day prior)...but $400 had me considering eating the eyes, head and tail.

What kind of fish was it?

I believe it was Orata. It was huge, probably about 24 inches from head to tail. The waiter brought it out on a large cart and proceeded to skin/debone it table side.
It was superb, but at the end of the day...it's fish and definitely was not worth $400. (it was something like $14-$15 per 100 grams of weight)
Sides were, of course, ala carte. Thankfully we ordered a bunch of them or I would have left hungry!

orata is $15. ($5/ounce)
$400 would mean 5 lbs.
