Not so sure. My Schengen flight today was slightly delayed before taking off. Pilot told us they were waiting for passengers as 'there were some problems at security/transfers'.
Needed 20 minutes to go through security with SP/Privium and arrived excactly 15 minutes before departure at the gate. Normally they start calling your name at that time but this morning they were still waiting for quit some pax.

I'm not sure exactly what happened yesterday, but as I was flying into AMS, our flight was delayed by over 1h due to the inbound aircraft being late to leave AMS, a quick glance at FR24 and the screens in AMS on arrival shows the majority of the flights are delayed.
According to the pilot this was due to "loading problems" in AMS.

Last week when leaving AMS I used the SP security on the right-hand side of terminal 1 (belts 13-15), and only 14 was open, so it took us indeed about 15 minutes to go through, and that is with only a small amount of trays going to secondary... I thought they were all meant to be open...

I would have indeed expected the weather to be the source of the issues, yet the pilot said something else :D

Same happened to me, but the pilot blamed matters squarely on the wind. Not only was the incoming aircraft delayed, but we then sat at the gate because waiting for our new slot, which was due to AMS capacity restrictions. After pushing back at the new time, we then held on short of the take-off runway for another 25 minutes, without any announcements to explain why.

According to flightstats the incoming aircraft had experienced repeated equipment changes as well as a gate change from one end of AMS to the other before finally departing late.

Never ceases to amaze me how Schiphol, with more runways than any major European hub, can't handle a bit of wind. We finally ended up landing on runway 27, touching down at a higher speed than usual after a steep descent.

Don't blame the airport, blame the planners. Who in their right minds would build an airport where all the main runways are at right angles to the prevailing wind?

(Huge delays again yesterday, with the North/South runways all closed due to crosswinds)

Makes you wonder, especially because they had originally designed a layout with seven or eight runways radiating from the terminals like offset spokes.

With the risk of this not being the appropriate thread, we will be flying AMS-DOH with QA in J, EU passports, one bag needs checking in. What time would you advise us to be at Schiphol when dept. is at 22:35 ?
QA website says 1 hour for J class but that sounds a bit optimistic to me.

With having priority due to J and EU passport, one hour is possible, though I wouldn't risk it anymore.

Yesterday it took me 15 minutes to check in a bag, get through SP security (including as usual my bag being sent to secondary, so had to wait for about 5 other bags to clear up) and immigration (there was a dedicated 'manual' EU passport queue which was much faster than the e-gates...)

That isn't to say I didn't have days where I had to wait 10 minutes to check-in a bag, another 15 minutes in security and having 2 KMARs "all passports" and no e-gates working so make that another 15 minutes.

There are almost no flights leaving after 10PM so that does play in your favour, I would say arrive at 9PM the latest.

Yesterday's De Telegraaf quotes several AMS security employees. Their attitude can be summarized as follows:

Passengers should stop whinging and whining, shut up, and follow orders. Taking pictures is not allowed, because our union says so.

Sailed through Schengen T1 today, but the airport was very quiet, there were hardly any queues at regular security either. Managed to avoid secondary for once, but not the pat-down. Overheard a victim at secondary complaining, only to be told that "We listen to what the machine say us to do". Oh, all right, that makes sense then.

Overheard someone one the plane saying he had waited 90 minutes in line at transfer immigrations.

I had a haircut last week, and discovered that my hairdresser of many years standing is married to a G4S supervisor who has worked at Schiphol for a long time. The implementation of centralized security was a disaster (yep, we all know that from personal experience), and the lack of improvement is mainly a staff issue. Suitable candidates are hard to come by, there are many temps (think college students working during the spring break), new hires are not properly trained, are lousy at analyzing x-ray images, do not take any responsibility, show no initiative and completely lack flexibility. Yeah, we know all that from personal experience too.
