Interesting Markets in Tokyo and elsewhere

Wondering if anyone can provide info or point to websites identifying the better or more interesting markets (merchandise/flea and food) in Tokyo and other places we'll likely visit (Osaka, Kyoto, etc.). [Again, I apologize for the vagueness as we're still mapping things out.]
I can't seem to pull up many good threads in this forum searching on "market". Obviously I'll be doing a google search too ("city + market" and maybe throw in "flea", "fish", or "food").
Tsukiji fish market and Nishiki Market are pretty much a given.
Looking for markets where there's a hub activity, interesting foodstuff or wares for sale, fun food to snack on, etc. Garage sale-like markets probably wouldn't interest us.

Some flea markets are listed in each issue of Metropolis. Few are themed but going to at least one will keep you interested even if a Japanese would regard it as "garage-sale-like."

Yup, already read that. I'm not trying to flaunt their rules but my interpretation of them is that they want to set rules to limit specific actions of tourists that impact their operations. They outlined stuff like people touching fish, flash photography during auctions, impeding carts, etc as specific issues. I won't touch the fish, I know how to turn off the flash on my camera, and I feel I'm pretty aware of my environment.
It's pretty common sense.
However, we're also tossing around the idea of getting a guide to give some more colour to the visit. His tours also seem to be regulated by the Tokyo Metropolitan Government.
