I'm not sure if you are asking about ryokans in Kyoto or Tokyo.
To get you started, as your post seems to be asking about Tokyo ryokan, there is a thread here:

It's not the most elegant of threads (it's hard to give a straight answer when someone asks the equivalent of "has anyone eaten mountain cheese in Switzerland?") but it covers most of what we know about ryokan in Tokyo and offers some preliminary suggestions for ryokan in Kyoto (knowing your budget would help).
