Rome - Ryder Cup - Things to Do end of September

Rome - Ryder Cup - Things to Do end of September

Any suggestions for 2 guys traveling to Rome end of September? I've been once before. Hired a tour guide and a driver. My friend has never been - so Vatican a must for him. We have 2 days of downtime and 2 days of drinking at Ryder cup.
What would be fun for him or us to do? Day trips?
St Regis 2 nights and 2 nights at the Aleph. No clue where he's staying, he wasn't smart enough to book early and I'm not sharing.
Best places to eat/drink? No budget constraints - but I assume things will be fully booked by all the corporate sponsors and golfers

My favorite pub is the football pub in Trestevere. Good beers, fun place. And Trestevere is fun in general.

If you like wine dinners then recommend Roscioli Rimessa. Was there in 2018 and going back actually the week leading into the Ryder.
One of the best meals I had was at Hostaria Romana, not too far from both of your hotels.
The Pantheon is one of my favorite places in Rome. Go early before the crowds.

Spent a week in Rome last summer.

If you like pasta, Hosteria Grappolo d'oro was by far the best we had after eating pasta every night.
