What are the Emirates routes with the highest/lowest (except from the GCC) load factor?

I'm pretty confident the lowest system LF is on the ACC-ABJ vv route. Rarely more than 100 pax on the A340-300, with maybe 30 local and the rest in transit to/from Dubai.
That said, I can't remember the last time that the flight was not oversold out of Accra to Dubai. 100% success on Y-J op-ups in 2010.

Don't know about extremes (highest / lowest loads)
I am sure EK is making a ton on DXB-TIP route (no competition besides QR which isn't daily unlike EK).
Other obvious routes are DXB-SIN, DXB-BKK, DXB-LHR, DXB-YYZ all of which have strong upper class demand.

Yes.. and also the Libyan (Arab) airlines. However they have no O&D capabilities like EK. There are loads of high yield expats (who are on lucrative contracts at remote oil wells, having J/F perks) who travel by EK (to connect to Europe! though its just a hop away). Thats mostly because of lack of F product on other carriers. Y is full of Filipinos and pax from sub-continent. Its very hard to get op-upd on this route. EK is flying A340-500 these days.

Me too but lately I've been on mostly full flights. We used to get a lot more 773/77W/772s before to KHI but now it seems to be mostly 332s.

MAN and LHR are definitely around 95%+ for a while now, but these markets definitely fluctuate, when I went up to LHR earlier this month, all the flights to LHR and MAN were operating with load factors of about 50-60%.
Just a look going further west, EK operates YYZ with load factors of 95%+ year round. JFK at the moment about 80% load, probably going to hover around this for a while, and then will be full in peak times of the year. LAX looking at about 60-70% at the moment and also full in peak times. SFO - 95%+ at the moment. IAH hovers at about 90%. DFW is about 70-90% for the next few days, is a new market so it'll take some time.

Sao Paulo had load factors of over 95% for quite a while until they started the new Rio de Janerio and Buenos Aires tag on flight which seems to be full recently, but of course can't judge profitability because EK may have sold these flights with cheaply to gain market attention.

The following is the most commomn situation on different routes, but bare in mind, for various reasons, you can encounter an empty flights on busy routes and vice-versa... for example: on 1st of Jan DXB-DME goes with no more than 15 pax, but the return leg on the same date is always overbooked; DXB-CAN-DXB flights are overbooked and go 777-300 2 class with 400 pax in economy, when there is a fair; you have to book at least 6 months in advance DXB-MLE flight in First or Business if you want to fly 18-22 DEC etc...

I heard by an average of 8 seats per flight. Y is very strong, F is doing OK but not full - but J has been very thin when I've been flying. J fares have just been reduced (after the F promo ended) so time will tell how big the market is.
