I'm crazy about the long-stem ones; it's like getting 5 globes' worth of heart with every one. I recommend pan-roasting them in the oven with some olive oil and salt. You won't be sorry. I do the same thing with Brussels sprouts, and even Brussels-sprout haters love them.

Ivyspice, that sounds delicious! Do you slice the artichokes in half and then just brush them with olive oil and sprinkle some salt on top? And what temperature do you set the oven and for how long? (I've never done the pan roasting thing and only really taught myself to cook a few months ago )

If you're using big ones, you have to parboil them first, and then you can proceed as described. There are some good basic instructions here:

You really have to try the Brussels sprouts too. Those you just cut off the ends, halve them, shake them in the oil and coarse salt and roast them in one layer in a 400 degree oven, stirring every 5 minutes or so so that they brown on both sides and don't burn. They don't take too long. When they have a good toasty brown going, toss them in a bit more salt and devour. Maybe I'm weird, but I'll go through a bowl of these faster than potato chips.

I love my artichokes stri fried with soy sauce and several other seasonings.

Any ideas on how to salvage my artichokes?

I steamed a couple of artichokes last night and then stuffed them with a mixture of breadcrumbs, butter, lemon juice and olive oil before placing them in the oven for approx 10 min.

But they're not done. I can't even pull the outer leaves off. I think that I probably didn't steam them long enough but, as they're now stuffed, I'm not sure what to do.

Any ideas on how to make them edible? Should I wrap them in a wet paper towel and try microwaving them for 5 min?

Yes, "steam" them some more in the microwave; it'll probably have to be longer than 5 minutes, but test them every 5 minutes or so. The stuffing won't be crunchy, but other than that, this shouldn't hurt them.
