tempted for another corn cherry scone but I’ve already had 2!

enchiladas verde (Trader Joe’s reheat)
tortilla chips
Raw organics - carrots, radish, cucumber
lime wedges
iced water - I totally forgot about the Topo Chico y Los Jarritos that I placed in the fridge just for tonight!

penne with parm & olive oil
meatballs with marinara

the pico de Gallo is so amazing that as long as I have any tomatoes (which’ll be standard for this summer!), I’ll keep making it. Just must also remember the cilantro. (I still have a full unit)

ice cream for dessert

Good for you...yes homemade pico is really good. I am a cilantro fan as well.
i am a bit confused ....3 different entrees ?

our child didn’t want enchiladas so I made some penne and reheated the remaining meatballs & marinara from last night. The marinara is Rao’s and sooo good - I prefer to just eat the Rao’s instead of making marinara with San Marzano (DOP) like before... the Rao’s is the best bottled sauce I’ve ever had!

plus the enchiladas box was intended for 2 people and not 3; I was quite happy to have them.

Why not say, "This is what is for dinner. Eat it or don't, but I'm not cooking a meal just for you?"

We did a steam pot last weekend so we're going to use the leftover shrimp for shrimp and grits and the leftover crab to make crab cakes.

Last night I made pesto for the first time! It was delish! We were watching Queer Eye last week and one of the recipes that Antoni taught the makeover person to make was pesto pasta with pickled grapes. It sounded good, and it was really good.

In the cuisinart I put waaay too much garlic, basil, romano cheese, and pine nuts I'd toasted in a pan, then added olive oil and lemon juice.

Served with orecchiete and sauteed chicken thighs, and red seedless grapes I'd soaked in some balsamic for 20 mins. And some alvarinho. It was great.

You do need an oily nut, though. People often sub with walnuts or almonds.
