So do we all love Joel’s potatoes recipe? I have passed by his place in Paris a few times.

cornflake ring is really good - what makes it different from Rice Krispie treats is lack of marshmallows and use of other glue agents.

Dinner tonight will be the same as yesterday's. Roasted butternut squash soup, turkey, home made cranberry sauce, mashed potatoes, gravy, green bean casserole (so tasty), corn casserole, candied sweet potatoes, biscuits and speculoos cooke butter pie.

I gave all of the leftover stuffing ("stuffin' muffins") to my cousin. I don't like stuffing (any kind) and try to make something palatable for me (this year - apple and onion, easy on the poultry seasoning).

Three of us also went through a bottle of Veuve Rose and a bottle of Laurent-Perrier Demi-sec.

Didn't you say it had corn syrup? there's your glue. Interesting choice for thanksgiving dessert. :p

ILuvParis Nov 27, 2020 12:27 pm

And shouldn't there be a big scoop of vanilla ice cream in the center? :)

Not needed but all desserts taste better with any ice cream :-)

Yes, that explains... :-)
the cornflake ring is one of the desserts at our past thanksgiving buffet, along with other desserts. My spouse and my in-laws love this dessert and some years there would be such scarcity that it was key to get this dessert before getting regular food. Other years we ordered one for the table.
Now that we are satisfied with our own, it’ll be easier than ever for me to want to just cook thanksgiving in the future - total costs must be $95 plus labor, which yield bountiful leftovers. I’m pretty sure the buffet is $50/adult and maybe $15-25/child and zero leftovers. I’ll be happy to just cook our own thanksgiving at the house, whether ours or a future vacation rental house.

I haven't tried my leftover potatoes yet today but I doubt that they will be as silky as last night. Maybe I will need to add more butter.

I saw several pics incl the potatoes.

I googled about leftover mash and in general it’s 325 for 25-30 minutes, and adding some liquid on top. It worked!!!

Hmm....my screen just shows blank with a little dot in the middle of each blank space.
I know how to reheat potatoes....as I said, these are not regular mashed potatoes.

Seems like I have been eating in vengeance .
Forgot to take photos after this first dish .

No turkey but goose on Thanksgiving ..
Goose cooked 2 ways - braised & crispy , steamed pomfret , different types of beancurd / tofu prepared in various ways with gourd , braised , steamed , fried , cannot list all we had ! Hong Kong kai lan with flat fish , braised ? mee pok ( noodles ) with seafood ..

Not been to this 90 years old Teochew ( Chinese ) restaurant before . Not in an area we frequent but the owner ‘ s repertoire is amazing !
The black bean crystal dumpling itself , which I had for dessert , is worth a return visit .
Would have had a third if I was not so stuffed ! Something that has to be eaten freshly steamed - that in itself is an art . Has about 60 ? desserts he can prepare .
Translates to no “ take away “ ..
Available only on certain days & too bad if regulars order all of them - only does “ limited edition “ off menu which he makes by hand himself .

Teochew cold crab

This was one of the smallest crab I have had but look at the packed roe .

I definitely love Dungeness crab body “butter” even without bread...

the freshly steamed dessert reminds me of Millefeuille which is best when eaten upon purchase and not taken out of shop when possible. I know it’s better in Breton but B Patisserie in sf has an excellent one.

With the caveat that I hate makes potatoes under any circumstances, I found the 50-50 potatoes to be absurdly rich. One bite was enough.

Oops, mashed. 50-50 is the Joel Rubochon potatoes -- half potatoes, half cream and butter.

There are many versions of this online....all similar. The one I used called for milk & not cream. Actually the ratio of liquid to the potatoes is pretty small and I guess as the butter cubes melt in it creates liquid. I might make it again...when we can have guests over....that was a lot of work for just me but for sure delicious and silky.

If you hate mashed potatoes, then which kinds of potatoes do you not hate? I’m fascinated that somebody hates mashed potatoes. I can understand preferring baked fried boiled raw salad or another iteration of potato more than mashed; but to hate mashed potatoes???? Oh wow!

We actually made the recipe which is printed in Bourdain's book, Appetites.

I don't eat many potatoes but I do like several fried versions -- tots, frites, pommes souffle. (When we lived in maryland, my aunt and uncle would often be in DC on business and usually stayed at the Ritz (?) on Embassy Row, and they had a restaurant that served pommes souffle. Wow, those were fantastic and near impossible to find.) We were making smashed potatoes this summer and those are pretty good, too.

I love most sweet potato preparations, including mashed.

Is it the texture? You obviously don't hate the taste of potatoes. What about a baked potato with all the goodies on top (sour cream, chives, bacon bits etc).

Turkey vegetable soup with a loaf of sweet French from our local bakery.

braslvr Nov 27, 2020 7:44 pm

Leftover Thanksgiving dinner tonight, which is roast chicken, mashed potatoes, stuffing, giblet gravy, green beans, and good old Ocean Spray jellied cranberry sauce. The chicken carcass and drumsticks have been stripped of meat for chicken enchiladas tomorrow, and the carcass is now simmering into broth which will be concentrated and frozen for future use.

I don't seek it out, but i'd eat it if served one. I skipped the mashed potatoes last night.

I am missing one the favorite parts of a Thanksgiving dinner....making a mashed potato volcano. I don't have gravy because I didn't cook a turkey but when I do....nothing like making a mound of mashed potatoes and a big well in the center --put in butter and then pour gravy in the well until it overflows like a volcano. Sigh.

I generally find microwave rather than oven reheating leads to better flavor and less dryness (using a mw cover especially). Of course if you want crispy in reheated food (eg fried chicken, pizza, green onion pancake) either a toaster oven or air fryer ;)

I agree...ovens are a very dry environment. Turkey slices will do ok in the oven if wrapped in lettuce which is mostly water so keeps things moist. Stovetop and microwave unless going for a crisp (such as marshmallow topping on sweet potatoes ) exterior. Bread products don't do well in the microwave either .

The online recipe I found for rehearing both mashed potatoes and turkey suggested 350 at 30min with some added liquids. All remained delicious :-)
even the moist stuffing retained its moisture.

Sorry, previously you asked for FT wisdom rather just doing online searches yourself so I thought you might be interested.

Glad you enjoyed the method you used.

Not for dinner, but Mr. CE made leftover eggs benedict... Stuffing cakes topped with poached eggs and gravy. Sadly, no turducken included for reasons I can't fathom.

Turducken was awesome! (He now wants it every year.) I haven't had any leftover but I think Mr. CE just nuked it yesterday.

Tonight's dinner was slow-roasted coho salmon (thank you Sitka Salmonshares!) with teriyaki sauce and left over ginger garlic green beans.

We got it from a local butcher -- Paulina Meat Market -- and they make it in-house. https://www.paulinamarket.com/products/frozen-turducken
