Well avocados are fat but they are good fat so that is true. But a nutritionist who makes a blanket statement that all pork is bad for you should be taken with a grain of salt. Does this nutritionist know about the rest of your diet?

For that? I usually go dark (mushroom) soy sauce or light soy if I have a salt craving. I think I've tried with Maggie seasoning but didn't care for it. You could probably use black vinegar (I'm assuming you're not talking about balsamic but the coarse black vinegar you get in those imitation earthenware jars)... If the places near you are really using fat back, it would help cut through the richness.

Any citric acid should work. I usually use a bit of lemon or lime depending on what I have on hand. That said, I usually make smaller batches or I might have all the ingredients ready except for the avocado and mix a batch right then...if you want the stuff to mix and mellow, make half about an hour before and then the second half just before the party starts.

Avocado may be good for you but environmentally it is horrendous. Destruction of farm land to grow high'water consuming avocado production (ie uses large quantities of fresh water), obviously density/weight means transportation emissions are high relative to other products (even when adjusted for nutritional content). Obviously caveated if you are close to avocado production but for those of us in Europe... that said, not sure I can admit to practicing what I am preaching here...

Tonight is part 2 of our One Off Hospitality "subscription". We pick up about 5 minutes from our house.

PUBLICAN QUALITY MEATS - 2/10
poached shrimp with gem lettuce, horseradish and sauce bagnarotte
charred cauliflower with kale pesto
braised sweet and sour brisket with cheddar grits
carrot cake with cream cheese frosting

The brisket looks interesting.

I had to look up bagnarotte. I could eat the the cauliflower with kale pesto. But why would I want to?

Don't feel bad, I had to look it up too. And keep it between us...looks like it's made with mayonnaise, which my wife says she doesn't like, so let's not tell her.

I love cauliflower. Indifferent to regular pesto, I'll report back on the kale pesto, but I'm fairly sure that will be my least favorite course.

The dairy ingredients in the other dishes would keep me away. There’s cream in that sauce. I’m not a kale fan but would be open to the pesto. The texture of raw kale gives me the willies, cooked only slightly less so.
