I’d never seen green before, just the standard tomato version. The recipe I called up suggested an eggplant version as well.
"Eggplant shakshuka" seems like matbucha. Also good but more of a relish on/under fish than a main. |

Sauteed onions and spinach with (seeded) jalapeño, cilantro, parsley, nutmeg, salt, pepper, (skipped the thyme), and half and half. Broil to finish the eggs.

I love baby back and they are a casualty of me being alone during covid. I used to grill them when I had a couple friends over---too much for just me & I miss them.

Why not just reheat the leftovers in a microwave? I be you could even freeze them and use them later if you make a really big batch.
If my craving doesn't go away maybe I can get some takeout somewhere . |

I cooked a whole chicken, seasoned with onions, garlic, celery, and carrots, and stuffed with a lemon, a clementine, and rosemary. I served it with bacon braised green beans and rosemary, garlic, and olive oil seasoned roasted baby potatoes.

I usually buy my baby back ribs at Costco because they have the best and the package size is pretty big. And of course I would have to freeze at least half. Ribs are what I consider a treat food because they are fattening so I don't need to be faced with eating or storing that much.

I bought beef ribs at Safeway and I’ve seen decent sized packages of pork ribs there... hope you can get them because you deserve only the best treats for yourself. It would be a great valentines present :-)
I have tried other ribs but nothing beats the Costco ones. It is like lamb chops---nothing beats the Costco ones of those either. |

Had the time tonight to make 3 vegetarian dishes that each take an hour: collard greens, roasted butternut squash, and Sababa Cookbook's Freekah Vegetable Soup. The soup called for a Parmesan rind, which I skipped. Might add a dried morels next time.

I was planning on eating at the CLT Centurion or picking up something at CLT to eat on my flight to ATL but my flight from RDU was delayed an hour so it's whatever I can pick up from a drive through to consume as I drive to Columbus, GA. Le sigh.

I got to have my Lamb Chop with Beef Flavored Rice-A-Roni. My wife was hungry for some beef tonight and I threw her a curve ball with Lamb Shoulder Blades. Of course, I got to eat more than my serving here as she had a smaller piece, but still could only finish half. Broiled with Lawry's Garlic Salt and Fresh Ground Black Pepper as the seasoning. My wife created her "dip" of a Meyer's Lemon Squeezed into Kikkoman's Soy Sauce. It's one her favorite seasonings for beef coming from the Philippines. |
