More sea bass tonight. Seared, with a sage brown butter sauce. Wild rice accompanied it.

I've prepared two things to bring for dinner. No idea what else will be there, but probably an overcooked protein, mashed or boiled potatoes, and some homemade empanadas.

1) Guacamole, with onion, tomato, and roasted chile.
2) Roasted Tomato salad, with roasted garlic, lemon, basil, oil/aceto balsamico, pepper, and gorgonzola.

Not everyone will eat what I made - the guacamole will be too spicy (it is not even as hot as Taco Bell sauce), and the fresh cracked pepper in the tomato salad will also be too spicy. The cheese may also be too spicy for some. Ah, the Argentine palate. Others will think it is among the most delicious salads they've ever eaten. If you've never been around a table with a few people starting to cough, nearly simultaneously, from the ground pepper in a previous salad (probably a bit more than average, but nothing excessive), you've never eaten in someone's home in Buenos Aires.

It's the same in northeast Brazil. Years ago I smuggled in some Boboli crusts and shelf stable pepperoni to show friends that the most popular pizza topping is not always corn or tuna or some such. I honestly never knew their was any heat at all in pepperoni. Little kids devour it here. Many tears and glasses of water later, I think to this day several think I played a cruel joke on them.

Reading these, I'd hate to see these people trying something sichuan or worse, something containing carolina reaper, trinidadian scorpion or ghost pepper...

(BTW, not sure about down south, but Taco Bell here has something called fire sauce.... don't know if it exists there... doesn't really have any bite, but I know people who dash for the nearest water fountain for the medium stuff)

There are sometimes some peppercorns in the pepperoni.... it's usually well blasted and blended in, but the more rustic versions tend to leave some visible.

Long time, no post. Since I don't routinely photograph meals I feel as if I'm not a great contributor, but would highly recommend the NYTs recipe we tried today: Brothy cod with mushrooms and peas. Following the recommendations of those who reviewed it, I swapped water for mushroom broth + 1T white miso and a splash of soy sauce, and then added a handful of homegrown spinach at the end. Very satisfying veggie-packed dish.

I despise shrooms but I am impressed that you are harvesting spinach already!

Went to a crawfish boil tonight celebrating a high school graduation. While we were waiting for the mud bugs to cook, there was fried fish the graduate and his friends caught this morning, chicken tenders, fries, hush puppies and coleslaw. Then there was 100lbs of fried frog legs. Then the crawfish finally appeared.

Balsamic/soy marinated flank steak. We had been on a Santa Maria Tri-tip kick. This was mighty tasty for a change.
