There was a mom & pop Chinese place called The Jade Garden where Ma Kettle and myself used to go during our dating period. They did not have Egg Foo Yung on the menu, but they were delighted to make it for Ma whenever she asked for it. She said it was always the best she ever had, so we couldn't understand the reluctance to make it a regular menu item.

The much talked about "Secret Menu" at In-n-Out really isn't particularly special to me. It's simply some "code words" to do some simply modifications to the standard, very limited menu and get the food prepared in a specific way. No magic word will conjure up a fish sandwich or chicken nuggets or anything like that. Or even some slices of bacon for your double double.

I once went to a Japanese restaurant in the U.S. with some Japanese people, and they asked the waiter if there was a special menu. Out came some menus printed in Japanese only, featuring foods that most Americans have never heard of unless they have lived in Japan.

I've also been in Chinese restaurants where there's a blackboard with specials written only in Chinese characters.
