Last night, we opened a 1997 Wellington Merlot (Sonoma County). The winery recently shut down and this was a random library selection thrown in with a case deal. I've held it for several months debating whether it would be any good.
After decanting for 45 minutes, the wine was absolutely outstanding. Minimal sediment and lots of fruit left - almost jammy. It was perfect alongside my pot roast and I wish I had several more.

Any chance it is bottle variation or do you think this is typical of Sauzet's 05 Puligny? I actually still have a fair amount of 2005 White Burg

I think it's also certainly a matter of taste preference. I personally like a decanted ~10 year Bourg blanc for its richness and intense finish, whereas I have some friends who always drink before the 5 year mark because they prefer retaining the acidity/fruit balance.

I think there's certainly chance of bottle variation - which is one of the main reasons why I tend to not age my Bourg blancs past the 10 year mark. The variation even within the same vintage and producer is frustrating.

There is no universal time, but with older wines you do need to be delicate.
I usually do it as a quick swirl or 20mins max.
Maybe I need to drink better wines?
Speaking of Decanters...does anyone else use one of these?
I would suggest just going with a regular aerator though.
