I may be too old to learn a new language (I still catch myself using NWA-isms ) and in my four legs I think there are four different J configurations. On three I managed to get single seats but the last leg (EWR-LAX) is 2-2-2 in J, so I *could* have somebody next to me.
Depending on your tolerance for layovers, take a look to see whether the EWR-LAX flight after yours has the new, 1-1-1 layout. Alternatively, it's possible that UA does an aircraft swap closer to departure date and puts you on a plane with the new seating.

It did change, to 1-2-1 so I snagged a seat on the one side. But just means it probably will change again

I fly NYC-DEL/BOM frequently for work. Used to bend over backwards to fly DL/AF/KLM/VS with routing via AMS, CDG or LHR. For a short period of time, when JFK-BOM was operational, it was all great. Currently, as work travel restarts, not only flying via Europe to India is a pain in the rear (Indian Govt. has special COVID requirements for transiting pax), but I am starting to question my personal reasoning of being a DL/SkyTeam loyalist "at-any-cost". Is it really worth?

Case in point, I am about to do EWR-BOM non-stop next weekend. Really looking forward to their Polaris product.

I would temper your expectations a bit. UA is currently serving domestic F meals in Polaris.
