Had recent trip to BJ, Asia and HK. - October was too early to consider having Muslim lamb dinner. -- I live in the SF - Bay Area and much of what has been brought up to try can be had here or good approximations. I have had hongsiao bear paws in the US (friends had befriended hunters.) yummy. I am not interested in the choudoufu...can't get over the smell.
On an earlier trip to China that included LeShan, Guizhou, we had tried what I believe were honeybee larvae = OK. The ricepaddyworms cooked up as a quiche/custard was delicious in Macau, ditto for snake soup and braised dog. The kitchen was awesome - neighborhood hole-in-the-wall, but tasty food.

Had that in Guangzhou. Yummy!
Other suggestions...
Also in GuangZhou: Python, killed tableside. They drain the blood into a shot glass, mix with alcohol, then give to you to drink. Then they open the gall bladder and drain the dark green bile into a glass with alcohol, and give you to drink (fortunately, I don't drink, so I politely declined ). They then take the snake back to the kitchen and fry it up. Yummy!
In Beijing: Donghuamen Night Market. You'll find lots of unique and exotic treats to try here.

For insects et al. I recommend Southeast Asia over China. Cambodian Tarantula, anyone?
