Given that I think PHX is not one of the airports available for EU-US travel, you are almost certainly right.
Looking forward to going back to PHX once this covid situation is better ( but will be odd not on a 747-400)

My flight to Portland has gone to 0 availability in all classes so I think that this is now definitely going to be cancelled. Good job too - I really do not want to go there at this time.
I now have noticed that all the Sat flights in Sep and Oct have gone to 0 availability so I think that the route has been scratched for the time being.

Yes I'm keeping an eye for my sister also - I unfortunately ended up with one leg on the only AA flight still operating. They're booked on BA175 outbound which from what I can tell hasn't been operating, but it did have an aircraft change from 747 to 777 so perhaps they are at least planning an expanded schedule at this stage

I've just had the mail from BA cancelling the flights. Good to see that they did not mess about - I'm not going near there until this nonsense calms.

BA Holidays return flight from Boston to LHR BA212 in September now operating as A350 so downgraded from F to J. Was an A380 I think. No mention of a reduction in price, not planning to go anyway but that doesn’t seem right.

Standard procedure - the handling of downgrades is contained within EU261 but kicks in AFTER the flight has taken place. You can pretty much work it out though to see whether you’d be better off taking it or cancelling to rebook - BA does allow a full refund in this situation if requested.

I've had the flights in a BAH booking cancelled that I previously had to take 3 passengers off and move them to another PNR (and paid a £75, of which these flights have also been cancelled) amendment fee to do so. BAH are saying that the amendment fee isn't refundable. Is this right?

there are arguments either way about whether that is strictly in line with EC261 so if you do wish to dispute I would expect you’ll have to put in some effort for any chance of success.
