Probably they are waiting for the slot usage rules to be precise before updating the schedule.
Unless there is a spike in demand, there is no reason for Terminal 3 to re-open at this point.

Any speculation regarding the LGW SH routes moved to LHR, if they will be moved back to LGW with the S21 start or if they will be kept at LHR? I'm looking at TRN and for the moment is still scheduled from LGW starting from the end of March...

The slot usage rules for the summer would determine everything.
Before authorities make a decision on slot usage rules, nothing close to certain could be mentioned about the future of LGW short-haul routes.

I would be more interested to know if this news turns out to be true. So far, I have only read about it on sfgate.com a couple of days ago. My flight SFO-LHR is on January 25 and I would highly appreciate it to know if this service is going to be suspended or not. Do you have any further information regarding this?

SFO was listed as a destination for crew bidding which is currently open for February. It's also the first month in a long time which we can actually see trips listed rather than just bid for days off.

I had been scheduled to fly via SFO in November but the loads for the week were so light that I was not surprised when flights were cancelled (and that’s saying something as the flights I took via LAX and DFW were at around 20% of capacity).
I think I read that passenger volume was down 90% for US-UK/Europe, but I would guess that number is closer to 99% for the Bay Area.

The SFO metro size is only the 12th largest in the US, but usually has the benefit of the tech industry. In general the tech industry has taken covid very seriously and there’s very little demand to fly currently with many tech companies minimizing travel until at least Q3.
Combine that with the California lockdown which has closed in restaurant dining and there’s even less demand for fish as well.
