i think the original "212 seat" and "new 212 seat" is comparable in legroom/width/comfort.... the "new 212 seat" does have much bigger 15.6" (and very responsive) screen
I've only tried the "new 212 seat" PE once

You are way overthinking this. PE seat is pretty much the same. You'll get lounge access, better food and service with NH. You'll get a wider selection of entertainment with UA. Up to you whether it's worth the $200 premium. If you've never flown NH, then it might be worth it to try something new.
