Mauritius + Seychelles
Thinking 16 nights roughly for Mauritius + Seychelles.
6 nights at Oberoi Mauritius + 4 nights at Le Domaine de L'Orangeraie (La Digue Seychelles) + 3 nights Constance Lemuria (Praslin Seychelles) + 3 nights Constance Ephelia (Mahe)
Thoughts on that? Hotels solid choices? Any suggestions or recommendations would be appreciated.

We did both islands last year (IC in Mauritius, FS in Seychelles). Mauritius left me rather unmoved. Nice beaches, but the rest of the island was pretty unmemorable and in parts not at all attractive or interesting. You didn't ask, but personally I'd just spend the time in the Seychelles which really delivered on all levels.

We did Four Seasons Mahe and Desroche in April 2023. Both were spectacular. Depends on the type of vacation you want, but Desroche Island was really special.

Looking at FS Mauritius at the end of a Safari.

That's fair. I would say Mauritius, for me, is less about the beaches and more about the hiking. I also figure why not since I'm quite literally in the area. Not sure if I'll hit it again after this trip. But totally agreed on giving Seychelles more time.
Great minds! That's exactly what I'm doing. 2 weeks of safaris in Zimbabwe/Zambie, then Mauritius, then Seychelles. I definitely looked at FS Desroches, it's still in the back of my mind. But I've heard Praslin and La Digue are the crown jewels of Seychelles (excluding North Island which is way way way out of my budget) so am leaning that way.

One dining tip for Mauritius (and it was probs the highlight of the island for me). Amazing food and a really enjoyable slice of island life. https://escalecreole.net/en/menu-eng/.

That makes sense - the hiking is supposedly good but I'm far too lazy for that. ;-) And yes if you are in the region why not do it.

You are 25mins drive from either the Botanical Gardens (I found hot and dull, but I had a childhood scarred by visiting gardens) and L'Aventure du Sucre which I really enjoyed. The resto is also 20 mins from Port Louis which is maybe worth s half day for the Central Market and a meander to get the vibe.

Are there many good dining / restaurant ventures worth visiting or are the best places all inside the resorts?
