I would suggest to use www.hongkonghotels.net
to research hotels (location, price range, and info). It also has internet prices for some hotels too. Personally, I will recommend Kowloon Hotel (around $100)and Hyatt Regency HK (around $140)for their locations.

When I go to Hong Kong, at least once a year, I book my hotels with a travel agency located in my local Chinatown. They have the lowest rates I've ever been able to find. Typically business class hotels, not 5 star, but very sufficient for me, and I DO have standards.
I'm sure that there are many agencies in Toronto's Chinatown. Most hotels that my agency offers are listed on the web site listed above, so it's a good way to compare.

Cheapest is generally to go thru one of the loacl (HKG) travel agents. I can give you a couple of name if you want. If it's for next month, you can probably get something for around 5-600. (I know places - that are OK actually!) for down to 200 HKD (in Mongkok)
Either that or if you want somewhere more upscale, most of them still doing a HK ID Card rate - If I'm around, I can get this for you (send me an e mail)
While doing this, just called an agent...a few rates FYI:
BP House 450 (Kln)
Empire 500 (Wan Chai)
Furama 1100

We've winged it and usually pay around $50-$60 US per nite. We just walk up to the hotel section on the left side as you clear immigration. We're close to the night market at TST, right on Nathan.(Tsim Shau Tsui Bad spelling I know)

I have used www.asiahotels.com and have found them reliable.
You can also go to the Marco Polo Hotels website. They have a fairly good special on at the moment for their three hotels, the Prince, the Marco Polo and the Hongkong Hotel. I really like the latter because it is right by the Star Ferry and Ocean Terminal.

The advice of locals is certainly your best bet. For another option in HK or elsewhere, though...
When traveling far from home, I frequently use Hotel Reservation Service (HRS), a Cologne, Germany-based service that has always offered great discounts: http://www.hrs.com or http://www.hrs.de
The week of April 15-22, for example, HRS is showing two 4-star hotels in Hong Kong for under US$100:
**** The Panda Hotel in Kowloon $85.45 (incl. breakfast)
**** Harbour Plaza Resort City $95.10
There are many other options, too. Another nice feature is that since the service is oriented toward German travelers who expect prices to be inclusive, all taxes are in the stated prices.

I've had good success with http://www.planetholiday.com/asia/hongkong/index.htm for hotels in Asia, although I've never used them for HK. You might want to browse through their site.

Charterhouse Hotel on the edge of Wanchai... about 5 minute walk from the Causeway Bay MTR. REALLY NICE, clean, cozy, boutique type hotel that was renovated recently. About HKD500 (@US$65) around this time of year. Check their wensite at http://www.charterhouse.com/.
Wife and I stay there 4 nights every March. Definately worth a try!
