Two Aspen Restaurants

Vinh Vinh restaurant http://www.vinhvinh.com/ a
Vietnamese and Chinese restaurant w/the focus on Vietnamese cuisine. Started out w/the Shrimp Spring Rolls (not fried) and the Shrimp/pork dumplings, both very good. I had the sesame crusted salmon (not really crusted, but sprinkled w/sesame seeds) which was OK. Wife had the 5 spice duck that was tremendous.

Ate at the Hickory House BBQ. While not the best I've had (best IMO are the Carolinas and Texas), it was still a very good que. Have both Pork and Brisket. Although the sauce is produced in Lake Zurich, IL. (but even it was good as well.)

Olives at the St. Regis has the best food I've eaten anywhere in Colorado. Not too much of a "local" joint, but awesome, nonetheless.

I'll second the Olives remark. It is one of my favorite restaurants in the country (been to the ones in Boston, DC, Las Vegas and NYC as well). Definitely try the Vanilla Bean Souffle.

Excellent choice for reasonable dining in Aspen. There's another location in Parker, CO. The best thing is that you can get ribs for breakfast ^
