The Fleet Status site is:

At the site, you can find information about the interior features, livery, etc., for every plane in United's fleet.
To determine which plane your flight will be on go to mobile.united.com and then click on flight status. Put in the flight number for your flight and just have it use today's date (occasionally it'll say flight not operated on this date in which case just choose one of the other 3 dates it lists). In the address bar you'll see something like this:
mobile.united.com/FlightStatus/FlightDetails?carrierCode=UA&flightNumber=1205&fli ghtDate=9%2F22%2F2013&origin=EWR&destination=SFO
Just change the flight date to match the day of your scheduled flight and then change the origin / destination if necessary. Once you do that look in the details tab under aircraft # and if they have assigned a plane it'll say something like #3506 and the type of plane. Once you know that go to the United Fleet website listed above and cross-reference the four digit number against the "aircraft" column under the appropriate aircraft type.
Keep in mind that things change as they get closer and sometimes either they won't have assigned an aircraft yet or it'll be assigned #0 if it's a few days away and they are anticipating aircraft movement (e.g. putting a new/converted p.s. plane entering into service).

Saw an interesting ship at FRA last week. Looked like an older 747 (200?) with the old UA paint job ( tulip tail, grey underbody, blue top. We were taxiing so only got a partial number glimpse. I think it was N76UA. Any clues?

Any word on what's going on with the former CO-Mike 764 birds?
3 of the 4 birds are showing that they're in HKG. It looks like they've been in HKG for awhile now... longer than just standard MX. Any confirmation of if they're getting interior conversions?

It looks like 5 more 757s are being retired (N501UA. the first, first), even though no more aircraft retirements were promised through the end of the year to improve operational performance.

N176UA has been out of the fleet for quite some time, although N194UA is in a non-standard United Charter color scheme (basically United titles on Atlas Air paint) for charter operations, mostly military. This a/c was operated by Atlas Air for eighteen months or so on passenger charter ops, then returned to UA. It doesn't quite sound like what you describe though. Interesting...

They will be getting 3 class conversion with lie flat business, 3-3-3 seating in Y. Not sure which crew rest option they will have.
If you mean Pacific as in high density for Hawaii, those will be the remaining non-ER 772s, 768, 772 & 779 and that should start after the first of the year.
