I love the 777 and haven't noticed the problems you describe.
The 717 is the nicest plane as far as the air goes -- constantly circulates outside air unlike all the other planes that do some amount of recirculation. It really makes a big difference. I have flown the 717 on AirTran and really liked it.

Of 'wide-bodied' twin engined aircrafts, the 777 is indeed the noisest. I prefer to take the A330 over it anyday! No one can beat the A340 on quietness! My travels on Cathay Pacific Airways had me convinced that the 777s are always louder than in the front that the middle sections. The A330 are quite quiet throughout. Yes and the cabin attendants have told me that too.
To the dry-nose syndrom, it all depends on the airline. The pilots can regulate how much moisture it is in the air. But take a saline nasal moisturizer spray anyway, it helps!

I've flown on UA's 777's (many of them), A CX 773 and been on the #1 777(though not in cruise) and I find the 777 to be as quiet as the A330/A340 and I don't find any of the dryness problems described. I do agree the initial climb buzz of the PW4090's/4098's can be quite loud, as with the A320 IAE engines, but in cruise I find the aircraft fine, very smooth and quiet and I can sleep quite well on them. They don't seem to have the gentle throbbing vibration that goes through the cabin that I've felt with the 744 (UA) in cruise which gets very noticable during a 13 hour transpac flight.
