Caution: Water on board
Here are the facts of the matter. Most airlines these days board only a limited supply of bottled water on each flight. The ratio of bottled water to tap available depends on where you sit.

This is a fairly accurate article - at least for US flag carriers. I recall Air France sets up bottled water for pax in Y to help themselves to throughout the flight. There's plenty to go around.
On the other hand, I recall seeing F/As fill up bottles from the tap on UA flights in Business.
I just bring my own.

This story was broken about 2 years ago by the son of our very own Letiole and the WSJ, who saw her post about the results of the experiment, and contacted her about it.
I'm still thanking her & him for it.

I always bring a bottle of water on board, mostly because I get thirsty (especially on long-haul flights) and don't want to spend the time or effort to get a FA's attention just to take a sip.
I do, however, try to save my own bottle, and drink what the FAs offer, as long as I see that it is bottled water. Sometimes later in the flight, I see they've switched to water from a pitcher, at which point I politely decline.

It may just be the airline I fly the most (CO) but the only time I've ever seen water served from anything other than a bottle in recent years was on IAH-LGW-IAH in BusinessFirst. Then it was served from a pitcher, but I could also see into the galley where the flight attendants were filling the pitchers from the water bottles.
I have no problem drinking the water on board if it's bottled. And I have heard CO flight attendants tell passengers before that the company's policy is to only serve bottled water during drink/meal service.
