Which Caribbean destination?

Anguilla is an outstanding island with wonderful beaches and a few excellent hotels. If you are looking to go luxury then I'd recommend the Malliouhana Hotel. http://www.malliouhana.com/ The Malliouhana has amazing food and probably the best beaches of any of the hotels on the island. The food blows away the CuisinArt Resort and Cap Julca which sometimes get rated better, but really are not better at all. In fact the food is probalby the best in the entire Caribbean at the Malliouhana. The CuisinArt has a great beach as well and some really nice rooms and a very nice pool as well.

If you're not trying to see how much you can spend on rooms and food there are a few other hotels on Anguilla which are also nice with good beaches.

If you want more to do than spend time on the beach and eat, I'd highly recommend Barbados. Barbados has great shopping, a little bit of nightlife, good restaurants, a wide variety of hotels and some pretty decent beaches.

I agree about the food at Malliouhana; however, it is very expensive. Not that CuisinArt and Cap Juluca are inexpensive. I think the best meal that CuisinArt does is lunch. There are many excellent restaurants on Anguilla. On the rooms side I don't necessarily agree that Malliouhana has nicer rooms. I have several friends that stayed for years at Malliouhana and have now switched to CuisinArt because as they feel that Malliouhana is "dated." Here's another vote for St. Barth's. Beautiful beaches & scenery, incredible food, good nightlife and since development is strictly limited on the island (no chain hotels or resorts), it has a very peaceful, laidback ambience. It ain't cheap, though

Cuba!!!

Nobody mentioned Cuba: the BEST. We went there last year, rented a car for two weeks and drove from East to West all over the island. (arrived in Holguin and left from Varadero) The Cubans are wonderful people (it helps if you speak Spanish), every city has private ('dining room size') restaurants with excellent food, lots of culture and sun, and $1 mojitos. Cubans are very eager to speak with foreigners. Add the 1950's cars, some of the weirdest museums in the world, fantastic music scene.
I know that Americans aren't officially allowed to visit Cuba, but we met lots of Americans in Cuba, most of whom told us that they couldn't care less about that law, and they didn't expect any problems with the US authorities.

Couldn't agree more about Cuba - great, fascinating place to visit

i'd like to second the vote above for Nevis. the four seasons is great. also, you may consider the marriott on st. kitts. (the sister island to nevis).
