Bottom line is that they have a great deal of flexibility in what they book you on.

A side benefit is that, with some airlines, rebooking often changes your fare class in a direction that's more favorable for earning elite status.

I was bumped on an AirJamaica (Delta) flight from Curacao to Atlanta in Montego Bay, and when I told the gate agent that I had never been to Jamaica before, she let me choose my flight back to Atlanta, and I got the last flight from MBJ to ATL the next evening. They even put me up at a Holiday Inn resort with an open bar and restaurant (though the food and drinks were bad)!!

Also if you're going for elite status, try to negotiate a first-class ticket, even if you have to wait an extra hour or so. Every time I have been bumped and moved into first, I have gotten full elite credit for the new booking class.

How about getting bumped on international flights? </font>
I was bumped on AA last week DFW-LGW, and went out 22 hours later instead. I received a $500 voucher, hotel for night (Sheraton), and $40 in meal vouchers. I tried to volunteer back in Nov on JFK-LHR, also offering a $500 voucher, but they wouldn't use me (probably because I was already on an upgraded business ticket). They did upgrade me to a sleeper suite in first as a consolation prize, though.

The only other international bump I can recall on UA was to Australia a few years ago, and I got two nights hotel (2200 departure so they covered up until flight time), and a $600 voucher. I'm not sure UA is going higher than $400 now, though.

I second requesting F on a bump. I've gotten extra miles and MQM on Delta by getting a higher fare class on my rebooked flight.

Also stayed at that Holiday Inn in MoBay years ago and sorry to hear the food hasn't improved. Sent one of my underlings there on the next trip and she was robbed in her own hotel room.
