Thanks everyone for the pointers. We'll have a look at a few of the options.
BA seem to have some reasonable flight + hotel deals at the moment.
For example Dubrovnik flights are about the same price as flight + hotel in some cases!

perhaps any of the small to medium-size towns around Lake Geneva, such as Lausanne? the ferries are a great way to commute to and from other towns up/down/across the lake
perhaps Iceland? (I have never been there, but it certainly seems like it would be a memorable trip)
