EUR- Euros
ILS- Israel Shekels
CHF- Swiss Francs
GBP- Great Britain Pounds
MXN- Mexican Pesos
DKK- Danish Krone
When I arrive at an international destination, I always withdraw cash from an ATM to cover cab fare, meals and misc expenses. Usually I have money leftover.

When I stop back home I offload the currencies for places I don't figure to be, and add the currencies I will need for my current trip, as well as some easily convertable ones. Currently loaded, I have:
Korean Won
Japanese Yen
Thai Baht
Canadian Dollars
British Pounds
Euros
USD
Australian Dollars

What a timely thread...
My wallet currently has USD and HKD (Hong Kong Dollars). The HKD are a funny story. Just prior to Christmas I purchased about 1kUSD worth for an upcoming trip. I happened to leave them on my desk at home. Over Christmas, my apartment was robbed...they took pretty much everything except my HKD. Apparently the local thieves aren't so worldly.

GBP, DKK and EUR in reasonable quantity (coins too - it's a great wallet).
Also bits of homeless USD, JPY, CNY, THB.
Oh, and a cycle pump valve adapter. Those Woods valves, eh?

For most other currencies I try to get rid of them by the time I leave the airport. I have small amounts of others, of course, but doubt I'll use them any time soon.

Similar. My international travel is planned, and I keep ziploc bags of each currency with my passport. When I'm ready to go, I can grab the bag of Euros, Pounds, Yuan, etc., which generally contain enough to at least take a taxi from major airports to a downtown hotel (if I can't hit an ATM at the airport).
I don't generally put too much thought into stuff like this.

I have Turkish liras, Mexican pesos, israeli shekels, and US dollars in my wallet right now. The money is mostly leftovers from being abroad this summer and the Mexican currency is from a day trip to Tijuana.
