Currently just USD, THB, and JPY in my wallet. The baht because I never got rid of it after my one and only trip to Thailand and the yen because I travel to NRT frequently and it's helpful to have it on me.
The collection at home is an entirely different story...

I avoid having excess foreign currency like the plague, and normally only keep serious amounts of cash in currencies I use often, which are CAD, USD and GBP (although only to feed my online gambling). Of course, I have those pesky little small notes and coins which I have leftover from currency exchange, etc.
In my actual wallet:
CAD (Canadian Dollar)
USD (US Dollar)
CAD Credit/Debit cards
USD Credit/Debit cards
HKD Credit/Debit cards
Money I have lying around:
KRW (South Korean Won)
TRY (Turlish Lira)
GBP (Pound Sterling) + GBP Credit/Debit cards
JEP (Jersey Pound)
EUR (Euro)
CNY (Chinese Renminbi)
HKD (Hong Kong Dollar)
SGD (Singapore Dollar)
THB (Thai Baht)
JPY (Japanese Yen)
TWD (Taiwan Dollar)
KPW (North Korean Won)
MMK (Burmese Kyat)

In a huge jar at home, I have probably 40 currencies. Mostly coins with some small banknotes in there. Most of the pre-Euro European ones, a half dozen or so Asian ones, some Middle East, and a few Caribbean/Central American.
I generally try to keep 20-40 each of EUR, CAD, and USD onhand when I travel. Or at least two of the three. Yeah, I'm a credit card guy like most FT'ers, but enough cash to buy a subway/train ticket or a meal prior to finding my first ATM in a given country can be handy.

70 CHF (Swiss)
10 Euro
5 AUD (Australia)
5000 Colones (Costa Rica)
15000 Pesos (Mexico)
90 RMB (China/Yuan)
Handfull of Italian Lire Coins (now worth collection value only)
I wish I could get rid of the Yuan, but I was told there is no way to exchange it for USD back here in US, though only worth about $12 I suppose.

You can convert CNY quite easily in the US, it's just that the fees for such a small amount would make it completely not worth it.

The Panamanian currency is called the Balboa. It operates in parallel with the USD, but Panama does mint its own coins.
