'Must-dos' in Hua Hin?
We're going to be in Hua Hin for a week starting Monday after a month in Penang. Staying at a homestay a bit south of the Hilton.
Any insights on what to see/do beyond what it talked about on the web!?

Plearn Wan Shopping Village
mostly stuff Thais would want to do.
Helps to have a car, May tends to be rainy - beginning of the rainy season so you may get wet on a motorbike.

There's several seafood pier style restaurants, I think Chao Lay is the famous one of the bunch, though we like a lesser known one even more, but I think it moved. I think the one we liked was Saeng Thai, but it's been a couple of years since we went there.
The last time Yanisa and I were in Hua Hin in January we went to Rua Rim Tarn restaurant, south of the Hyatt. It was really good.
Hua Hin is mostly for relaxing.

The night-market can be fun. But the idea of making a diversion to see the old station building etc etc and the other "attractions" leaves me cold.

We had a perfect time in Hua Hin.
We stayed at Baan San Ploen Condo just south of the Soi Bintabaht Walking Street area. Awesome pool and beach there.
Mostly we took the advice from this thread and laid by the pool and beach.
But we also took in Soi Bintabaht for lunch and dinner, got massages and even visited the dentist while we were there.
To us, it was the perfect way to wrap up 5 months in SE Asia: quiet, relaxing and we were even able to do some work.
Not the most awesome beach in Thailand, but nice enough for being so very convenient to Bangkok.
I would recommend a week in Hua Hin to anyone!
