There's a plethora of wonderful restaurants in New Orleans, and most do a great job on seafood. It's almost hard to go wrong.
Some personal top seafood picks:
GW Fins
Drago's for chargrilled oysters
Acme for raw oysters
Not sure what sort of history you're interested in, but the National WW II Museum is supposed to be excelent, and I'd imagine they will have some special events for Memorial Day. For local history, just a walk around the French Quarter can't be beat.

My See Food diet involve eating everything I see! . Seeing food is not hard in NOLA.
+10 for swag's recommendations of Drago, ACME and GW Fins plus mine of Mulates and Domilise's Po-Boy & Bar.
I have been hitting three out of those five whenever I am in NOLA.

The city and surrounding area are chock full or historical sites. I suggest at least scanning a guide book to find the best sites that suit your particular interests, and/or book at least a city tour. Same for restaurants (unlmited budget? Great!). By sea food do you mean just ocean fish or also river and lake fish (e.g. catfish)? We were there over Memorial Day weekend a few years ago. Quite warm and humid, though obviously that can vary widely from year to year.
