To get to Galapagos you need to get to Ecuador. To do so you have a smorgasbord of options with US and non-US airlines (AA, United, Delta, JetBlue, LAN, Avianca, Copa, TAME). Some of those may offer F.
From Ecuador to the islands there are no planes with F. The three airlines that can take you there (LAN, Avianca and TAME) all fly A319s in a single, all-coach configuration.

Of all the airlines that serve Ecuador, the only two even have international first as a product anywhere in their fleet are AA and UA. However, neither of these use an aircraft with a first class cabin to Ecuador.
You'll have to put up with business class, which will either be the same as, or better than, U.S. domestic "first".

TAME does operate "executive" class on the domestic routes to the galapagos, which is essentially the same as an US domestic F.
