Child in their own PNR
Can you book a child (3) in their own PNR or do they have to be in the same PNR as the adult they are traveling with?
Child will be traveling one way with mom and returning with dad and want to book an RT ticket as it’s much cheaper. Domestic short haul flights for all legs. Thanks!

I have done this before. It is good to talk or chat with a customer service rep so they can link the PNRs, this is especially helpful for keeping seating together if the planes gets changed, etc. I am not even 100% sure you can book a 3 year old on their own ticket without going through a real person.

I have done this on many occasions. Put the flights you want for the adult(s) on a 24 hour hold. Call into AA to buy the child's ticket, referencing the PNR(s) for the flights on hold (they will be linked). This works for award tickets too.
Keep in mind that you will be required to check in at the airport for the child (in order to verify the adult is also flying). Checking in through the app or a kiosk will not be possible. So get there a bit early.

Alaska Airlines is brilliant in handling this situation: you can book the adult ticket first, then when you book the child it recognizes that there is no adult on the booking, asks you for the adult PNR, and lets you book the child on their own ticket. Wish AA had it working that way. If you can buy the ticket as a codeshare through AS, maybe try that (although I think this may only work on AS metal; I know it didn't work for an AS award ticket with an overseas partner airline). I do this routinely for companion fares and/or adults flying paid while kids are on awards, for example.
