They expire the same day. You can use them on the next flight or on an evening return. If you book a RT with a connection you get two of them.
The policy is due to people printing out multiples at home and using them on many flights, or so we were told. We suggested many corrections that would still allow later usage, but drink on your 6 a. m. is the WN way.
I may slip mine in the drink menu or magazine hoping someone will use it later. I will even order a drink and throw it away.

Yes...but most FAs are quite diligent about twisting off and throwing away the cap.

Getting back on topic, on my September 19th WN 2068 OKC-LAS, I attempted to use my "expiration date-less" drink coupons with no success. The FA suggested I mail them in a letter to WN asking for replacements under the new system, especially if they were ones bought at the gate when the cashless cabin was implemented. Now to go off topic, I did use my new RR 2.0 coupons for a triple Jack and Diet Coke and was rewarded with 1 unopened can of Diet Coke, 2 cups of ice, and 3 unopened bottles of Jack Daniels. An hour later, I repeated the order with the same results, while also using the remaining 2 RR 2.0 drink coupons for my row mates beers.
For my return flight last night, WN 1222 LAS-OKC, I did not attempt to order any drinks due to having to drive home after landing. Also, the flight went out with 70 empty seats on a 73G, which is very unusual for that flight no matter what day of the week.

This week, BWI to MHT. A lovely older couple were sitting near me. The older woman pulled out two tan coupons and asked for wine. The FA proceeded to tell them they were no good, the older woman said "how can that be, there's no exp date on them". FA went back at her and was somewhat rude. Debate ensued and the FA caved and gave them the wine. However, it was after a rather hostile exchange... The FA being the hostile one and the woman remaining calm.
After this all went down, the FA came back no less than 3 times to further discuss it. It was quite a scene and not good for business. It left a real bad taste in people's mouths surrounding the seats.
The FA was obviously under pressure to not accept him and I bet did not want to get into a debate over a few bucks in wine.
On a side note, I was flying BS and did not feel like drinking. As I do every time I fly BS and dont drink, I give my coupon to someone else to use. If the FA did not take the old folks coupon, I would have sprung for them.

I saw a FA take an old coupon last Thursday on a flight from PHX.
I flew the last week in August and used my remaining drink coupons to buy everyone around me drinks, even after that I had a few left over so I sent them with the FA and asked her to comp other passengers until they were completely used up.

I flew sjc to las last Saturday. When FA came to get drink order, I told her I would like to have a beer and would use coupon. She said what kind coupon you would use, I pull out the coupon from my carry on bag, she verified before taking the order
