I doubt anyone (or very many) are going to make a special SFO trip and pay $2 every 20 minutes to eat at a truck. If there are only 2 trucks, with good line control, it shouldn't be too bad. However, a lot of employees are going to end up late after lunch.

but (and yes, this is me saying it
) I'm looking at it more from a security standpoint as what you have will be a food truck where no one knows what is inside sitting about 10-15 feet from the front of the terminal which will looked at with complacency as "it's only a food truck".

Police will monitor the trucks every minute they're parked there? Adding extra officers? No one will figure out that pulling up a fake food truck would be a good diversion for bad guys? Can anyone park where the food trucks will be parked? No chance this will add to congestion? Will they pay fees to the airport commission, as do restaurants inside the terminal? What a bad idea.

Security will be handled by SFO, and I assume that includes the right to inspect the trucks. And congestion is not really an issue at SFO on the upper level.
I think this is a great idea. It will give the airport workers some nice rotating options.
