That seems quite tough to do.

I would highly recommend Turkish Airlines (*A) Premium Economy/Comfort Class. They use Business Class seats. It looks like they fly into/out of IAH as well as DXB. You would have the added benefit of the lounge in IST.

Just remember the EQD requirement does not impact those with foreign addresses and since the OP will have a legit foreign address this requirement will not exist for the OP.

I've not flown out of DXB but have flown out of AUH a few times. Star gold does get priority access through security and check in, as well. As lounge access (which is quite nice). I fly LH to AUH and enjoy them. The senator lounges are good for a shower en route. I would fly TK if going between DXB and IAH, for sure. You'd get access to the lounge in TK too (and an option of a stop off in a cool city).

I did exactly what you are doing in 2000 for a two year stint in Dubai. I signed up for Emirates Skyward and it provided a lot of convenient perks at the airport that you will not get any other way. Remember that you will likely also take some vacation flights when in Dubai since so many great locations are nearby. this could easily take you over the 50k level.
The one major caveat is, as already noted, the EK miles expire three eyars after you earn them. Make sure you use them before you demob from Dubai (or have a relative/ good friend to give them to, whihc is what I did.)
