Try the HKG POS and search for the fare via multi city search. I found it by searching HKG-layover/hop off city day 1 and layover/hop off city-MEX day 2

It’s possible but it also has come and gone previously though. Hoping it’s not, since I needed to book this but had not pulled the trigger.
