Chris - Question about upgrading a room with $ after using points

I heard some info from a fellow FlyerTalker and my fly buddy and wanted to verify how this should work according to the Marriott System.

I booked an 8 night stay at the Renaissance at Wailea, paid the rack rate for the first night, the following 7 were using points and I paid 60$ a night to upgrade.

In addition, I charged a few meals to the room at the restaurants as well as some activities. Should I get points for these?

From what I was told, I should get stay credit for all 8 nights since I am paying $ on top of the points...True?

Also, I am interested in knowing if the activities booked by the concierge would also get me points. I was told booking through them I will get 500 points per activity, but would I also get points for the amount spent?
