Have never encountered it at a RI. I don't stay in them on a reg basis but when I do stay at one it's usually for a single night.

One could think that in an overbooking situation, the guest staying a single night might be more likely to be walked, rather than someone booking a longer stay. But no, in normal circumstances, there is no problem at all using an RI for a single night.

I've not heard or seen any Marriott hotel walking a guest when they weren't full, but if they did, you would be entitled to the Ultimate Reservation Guarantee which means they would pay for your room at a comparable hotel, get you to that hotel, and pay you for the inconvenience (the amount depends on the hotel brand.)

So I'm not sure any reservation "simplifications" would ever be worth it to a hotel to walk an elite member.

I stay at RI's relatively frequently (when the rate is cheaper than FI or CY in the area) and almost all of my business stays are 1 night. I have never had any issue with being walked. As long as you have a confirmed reservation, you should be fine.
