Where to stay overnight and what to do nearby
Narita Airport (NRT) is approximately 60 km from central Tokyo. It is blessed with numerous hotels, many with shuttles (served from the terminals' bus platforms) and often at surprisingly low rates for Japan. Some of these hotels offer free shuttles into the nearby city of Narita (Narita-shi).
If you have a few hours (say six or more) Narita offers many things to do--the Narita-san Shinsho-ji Temple and Park is beautiful and pleasant and on weekends one often sees performances of traditional arts and music. The Omotesando street leading there is lined with shops and restaurants, as well as a local museum.

Hello, everyone. We are coming to Narita from Osaka the night before an 11am flight back to Finland the next day (from Terminal 2). Which would be more convenient, a hotel at NRT airport or Narita town, specifically for the trains? We would take the Shinkansen Osaka->Tokyo and then connect to a train to Narita or NRT. For NRT, I assume just the NRT Express, but what about to get from Tokyo Station to Narita town?
My guess is the most convenient thing to do would be to take the Shinkansen to the Narita Express, get a hotel at the airport, and then visit the village by shuttle or taxi from the hotel if we wish? Which hotel at NRT airport is nicest? They're all fairly inexpensive, so really looking for a recommendation of the best/most convenient one for Terminal 2.
If the recommendation is instead to stay in Narita town, again, what is the best hotel?

i visited narita city around 10am - things were barely open. you would have to reach airport before 10am (more like 9am), so I doubt you have much time to explore city in the morning

Whenever I needed to spend a night in Narita before a flight, I used the Richmond Narita right behind the Keisei Narita station.
It's a simple business hotel, so no major amenities and fairly inexpensive. Foodstuffs I'd either go through the station to the other side where the restaurants are or take the shuttle bus to the Aeon Narita mall depending on time.
The hotel has a shuttle to the airport, you can also go back to the Keisei station and take the train to the airport which starts running at the 5am hour.

Plan would be to take a train from Osaka around 4pm, so it would be 6pm arrival into Tokyo or about 7pm into NRT. Mostly just have dinner and sleep. But thinking about it, since the NRT hotels are all a shuttle bus ride from the terminal, it seems easier to just stay near Tokyo Station and take an 8am N'Ex to Terminal 2, and not deal with any shuttle buses.
note that shinagawa/tokyo station may work too (since both shinkansen/NEX can stop there). others may work too (shinjuku, ueno w/ keisei skyliner express), but would require a (free) transfer from shinkansen to those stations
or super lazy, leave bags inside station lockers (pay 2 days locker fee) / luggageforward to NRT airport (which requires extra days from osaka)

Hello - looking for Unagi / Steak recommendations around Narita Airport / Chiba budget up to 15000 yen per person for dinner
We arrive at 3pm and leave next day at 11 am so will likely get a hotel that has a 10-15 minute airport shuttle like HOTEL MYSTAYS PREMIER Narita but will want to have a nicer dinner.

I recommend that you stay in the town center rather than at the Mystays, which is on a highway near the airport. The town center is easily accessed by local train from the airport (e.g. Keisei line local train to Keisei Ueno). Pick one of the hotels that's right by the station - e.g. APA hotel or Richmond.

Eat at Kawatoyo - Narita's oldest unagi joint. No need to spend 15,000 per person.

Failing that, check Tabelog for rankings. I don't like the look of the steak places but YMMV.
