The closest you can come is to hold a credit card that awards points, often double points when used to purchase airline tickets and sometimes other items, that can be used to purchase airline tickets. None of those earn airline miles for flying particular fare classes or distances.
As airlines compete with each other and banks do too, and different countries differ in regulation of both, IMO it’s highly unlikely there will ever be a universal airline affinity card.
Even trickier, you’re flying low cost carriers and two mainline carriers, Aer Lingus and Aeromxico, that AFAIK have no partnership. Perhaps saving money for your spending discretion, rather than accumulating airline miles, is more appropriate for your travel style. There’s a lot to be said for having a bit more folding money at your destination.

Frequent flyer programs are designed to promote loyalty to 1 airline, and some of that airlines close partner airlines.
Anyway with many ffp's you need to be a signed by member at the date of travel. A very few allow you to join after a flight. For those that do flights up to X days are eligible. X = 30 days is common.
As a sample for a full Y economy fare below. But other fare booking class's can earn differently or nil ff miles
Air Lingus - https://www.wheretocredit.com/aer-lingus/y [partner with some airlines]
Ryanir - nothing. A low cost carrier
Aeromexico - https://www.wheretocredit.com/aeromexico/y [Skyteam]
Spiritair- nothing
