Yes, if you arrive Paris (by air) and clear immigration at the airport (enter Schengen at CDG) you will be able to move around in Schengen area, i.e. also to take a day trip to Amsterdam by train. There should be no issues as long as you are able to show your passport with visa and entry stamp.

You should not have to show your passport to move around within the Schengen zone at all. The movement is legal and you will have no problems.

Mandatory passport checks are coming to Thalys trains - which is the most likely way the OP would travel from Paris to Amsterdam (for a "day trip").

Schengen visa holders should, in any case, not cross into other countries without their passport.

Wow, good to know. I wonder if this will be on all routes/directions. For example, they have security departing Paris for Germany, but no security for German boardings.

For now, Germany is excluded. The Netherlands, Belgium and France are introducing these checks

So far, no checks. Just took Thalys from Brussels, Belgium to Schiphol, Netherlands without being required to display any identification from the time of purchasing our tickets to boarding to riding and arriving.

The article linked to above by irishguy28 states

"The aim is to have the system operational by the end of the year,"

Was checked last September on Thalys, Brussels to Paris. Arriving at Gare du Nord, there were officers randomly pulling people for some questions.
