A mix of US and 2 different properties in Mexico. All were Marriott, Westin, W or Renaissance brands. OUS definitely way better, especially Asia.

Hyatt Regency in Greenville, SC gave a $20 credit at Starbucks for each day.
Grand Hyatt in Atlanta (Buckhead) gave $25 credit at its Onyx Bar (which could be used for dinner) as well as expensed breakfast at Cassie's Restaurant (ordered $60 worth of breakfast). Also the GH stacked my fridge with drinks and even put in all Coke Zero's for soda as they knew my preference. Crazy!

Does Hyatt have any policy on what hotels should do for a customer who has a Club Pass but the club is closed?

AFAIK nothing. You're not supposed to be able to use a club pass if there's no lounge or if the lounge is closed. If it's been applied, I would think it would be returned to your account. YMMV.

Have an upcoming 6-night stay at the Hyatt Regency Lake Washington near Seattle as a globalist. Lounge is closed but they are offering $25/room for breakfast at their market. Is this sufficient/reasonable? Should it be per person? What kills me is that the lounge is closed due to local covid restrictions, but the hotel restaurant is open. Should they provide us breakfast in the restaurant in lieu of lounge access?

Equivalent Marriott property would likely give you 750 total points and pound sand beyond that.
