Just because a hotel is on the list doesn't mean that they won't give you late checkout. It is just not a guaranteed benefit for Globalists.
I've stayed at multiple of the above hotels and they either offered or provided late checkout. But in some cases they pushed back and said they could do 1PM or 2PM or something, but not 4PM and they weren't required to.

eeehhmm... don’t agree. there is a seperate thread on this topic somewhere. The Globalist benefit is 4pm check out upon request. So if you request it you get it (hotel required to give), except at the hotels on the unpublished list.
That is the published list. https://www.hyatt.com/promo/hyatt-resorts

First, the list is not unpublished. It's in the post you are replying to (link to the Hyatt site)
Second, places on the list absolutely WILL give you late check-out, but it's subject to availability. I've gotten 4pm when available. Last time I was at the HR Maui, 4pm was not available, but they gave me 2pm.

The thread I was referring to where this topic has been discussed extensively: World of Hyatt Globalist late checkout - bogus and inconsistent
You don't need a list, as long as it's not a casino or resort hotel (and nor HRC or Mlife), it must honor 4pm late co to GLOBs.
(e) 4:00 PM Late Checkout: Upon request, Globalists will receive a 4:00 PM late checkout (local hotel time) on day of their departure at Hyatt hotels, provided that (a) late checkout is subject to availability at hotels with a casino, and Hyatt resorts; and (b) late checkout is not offered at Hyatt Residence Club resorts or M life Rewards destinations. (PLEASE NOTE: The distinction between a Hyatt resort and a Hyatt hotel may not always be obvious and Members are encouraged to call Hyatt’s central reservation service for help determining a hotel’s or resort’s designation. Please visit hyatt.com for contact information.)

That is the confusion. it has actually nothing to do with availability or not. If you request, the hotel must honor. TheT&C are clear. see in quote below (highlighted bold/red by me) unless of course Casino, Resort, etc. So a downtown hotel such as the GH NY cannot NOT give 4pm check-out.
So for example I was at the HR Maui. It's a resort. I requested late check-out, and they said they could only go as late as 2pm. That's fine, because it's a resort. But they still gave me 2pm because it was available. 4pm was not available.

The list is the list of resorts -- it's the list of places where late check-out is subject to availability.

ust pulling this list of resorts from the Hyatt site may provide some reference, but this list does not include all properties that have a casino, and it is not even a complete list of list of properties that have classified themselves as a "resort" (ie., HR Kyoto).
What the OP wants is a definitive list of properties that are not required to grant late checkout, and such a list most likely does not exist.
FWIW, unless they have changed things recently, those properties that are not required to grant late checkout are also exempted from offering guaranteed availability.

Hyatt Place Moab is a resort, apparently. Although it just seems that they need to say they are a resort to be one. This is the first Hyatt Place I've ever seen this BS. They gave me a 1 PM checkout, nevertheless.
If my Globalist status doesn't help me here (I did get free waters!) then it's really pretty pathetic.

HP Moab is a resort according to Hyatt. There's some discussion in the master thread starting here FlyerTalk Forums - View Single Post - Hyatt Place Moab, UT
HP Moab was NOT a resort according to Hyatt up until roughly 12 months ago (give or take 2 months) as this signage was not there in mid-2021 when we stayed AND we were offered 4pm checkout easily.
Here’s what I think happened -
HP Moab informed Hyatt Corporate that they need more revenue. This was was negotiated and achieved in 2 BIG ways over the last 12ish months.
1) Category Change from Category 2 all the way to Category 4!
2) Change from non-resort to resort classification. This not only benefits the property by not having to offer extras to Globalists like Late Checkout, but also allows them to charge resort fees to non-Globalists and anyone booking via a 3rd party.
I’m guessing these were the owner’s terms to stay with Hyatt and not reflag, either specifically requesting them or by saying they need more revenue and Hyatt offered these solutions which were agreed upon.
