7 hour layover in HKG and want to nip into town, how easy?

I did a similar thing last week, as BA Gold (arriving on MH and departing on BA 9 hours later). I went to the lounge on arrival and left my bags in the luggage storage area, which is watched with CCTV. I actually used 'The Cabin' but there are similar facilities in 'The Bridge'. I didn't see any in The Wing F side but may have missed it.

All worked fine - went through transit security and had a drink/bite in the lounge, then asked to be escorted out and back to passport control. CX was unable to do it for me as I arrived on Malaysian but said that if I arrived on CX they would have arranged the escort (in the event MH's handling agent did it with no hassle). I was in effect taken through transit secuirty backwards.

Arrived back a couple of hours before departure, had a nice relax in a cabin in 'The Wing' and picked up my bags.

If you arrive on CX in business, the arrival lounge would also be an option to leave your bags.

I have a layover from 6am - 4pm coming up on a Sunday and was trying to plan out what I would do (first time visitor to HK). Current plan is to shower and leave bags at the Arrival, take the Airport Express to central and find somewhere for good Dim Sum, walk around for a while, take the ferry, get a nice long lunch somewhere then head back to HKIA. My main goal is to try a bunch of good food, and do a lot of walking to stretch out after a long TPAC flight.

Any specific recommendations from some scenic walks, what I might find open around 7/8am on Sunday for breakfast, and a good spot for a more relaxing lunch?

Also, how much cash should I take out for this layover? I honestly have no idea what things cost in HK, but can use my credit card if they take it.

Similar to doctor15, I am arriving from YVR on a CX flight that lands on Dec 2 about 7PM, and then going out the next morning on CX at 9AM to SIN. I am going to meet family in Singapore, and then fly to Colombo on either Dec 5 or Dec 6 depending on what flights I can redeem my Avios on. I must be in Colombo by Dec 6 afternoon.

The schedule is a bit odd because these are award redemptions and constrained by available award space.

I am wondering whether it is better to switch to the 1:30AM departure to SIN on Dec 3 if it has space and just rest at the lounges at HKIA, or switch to a later departure so I have more time in town and can show my SO around - she has not been to HK before. I last visited in 2008, so it has been a while for me as well.
