you have three options

a) take a flight and rent your car at BOD airport
b) take the TGV (high speed train) and rent your car at Bordeaux Rail Station
c) rent your car in Paris and drive all the way ...

as you can see: you definitely need a car !!!

I'd take a look at the following websites: http://www.bordeaux-wine-tours.com/uk/accueil_uk.htm

AirFrance. there's not much choice
but if you're in central Paris before, you really may want to look into train (takes only 3h from center to center and .... can't beat that with the plane.

I have to agree with this one. My daughter and I took the TGV to and from Bordeaux last June and it was great. Nice ride, no hassles getting on the trains, good food on the trains. If you speak/read French, you can book your tix on the SNCF website rather than through RailEurope (assuming the OP is American, since I did not see a location on the profile) and get a much better deal. I did that and probably saved 50% by buying a discounted ticket only available in France. Printed the tix at home (got A4-sized paper at a local paper store) so I did not even have to stop at the ticket windows to pick up the tix. Only thing to keep in mind is that the TGV platforms at Montparnasse station are far from many of the metro line platforms, so give yourself some extra time to get onboard.
