On a serious note, the standard of driving in Dubai is pretty poor when compared to say, western countries - with death rates a significant public policy concern. Dubai is very small, so if you aren't going outside the major tourist areas, then I really would not bother with the rental car.
As to what to do with the kids? One of the water parks perhaps? Skiing?
