Frozen Clams (Or other bivalves)...

Are those that not precooked alive? Had a 'discussion' with a friend and she wasn't convinced... They still open up upon cooking.

A colleague of mine at UF worked with the company that developed some of this technology for the clam aquaculture industry on the gulf coast of FL. Their product is a tray of 12 clams that have been frozen, and have a thin film of slightly salty ice over them, to protect them from freezer burn.

I've had them a few times, mostly raw. The clams are most definitely dead (this is not mollusk cryogenics), but because of the implementation of the freezing process, there's no tissue decay or loosening of the ligaments at the back of the shell that allows them to open when the adductor relaxes as they cook. Thus, they are actually dead, but so fresh that for all food-based intents and purposes, they might as well be alive.

Pretty tasty, too.

I haven t encountered this myself, but think that Costco sells a steamer package similar... Might/might not be pre-cooked w/ butter & garlic-

Myself, we have razor clams (yes they are dead) cleaned and frozen in our freezer at home... (That we dug up ourselves)

We also can them in mason jars...

WOW! Even mention aquaculture and the entire Alaskan contingent shows up to badmouth it! Do they make you guys sign something when you get your driver licenses?

(If memory serves, it's only finfish aquaculture that's illegal in AK, and there have been some recent attempts with shellfish (abalone) in the state.)

I'm referring to any invertebrate, not just fake farmed ones.

I wouldn't touch beckoa's 100% all-natural stuff, either...

(Imagine me...an Alaskan who doesn't like sea food! I love me some fish, though--but that's a nice, normal creature with an endoskeleton!)

I found this thread while searching on "clam". I have never seen frozen shellfish in the shell except for mussels. How are they? Mussels seem to be hit or miss when I order them out and now I think the misses were of the frozen variety.

I'm dying for fresh clams and have a 2 lb bag on hold for pickup this weekend. They're pretty hard to get hold of this far inland. My local (60 mile drive each way) seafood purveyor heads for the gulf coast every Monday and comes back to open Thursday-Saturday. If I don't call within 30 minutes of opening Thursday, I don't get any clams, assuming he even found any. I guess Cedar Key is too far down the coast for him and he picks them up somewhere on the panhandle from a wholesaler.

Anyway, if I can find these frozen clams somewhere I will be sure to try them and report back. Linguine with clam sauce and lots of garlic. Mmmmmmm.

ok if we have to

I prefer raw oysters to clams but certainly won't turn them down.

But for me one of the most delicious clams I've eaten were whole (not strips) fried clams at this place on Cape Cod: www.arnoldsrestaurant.com

So I was in one of the local grocery stores today and was going to pick up some mussels for tonight. They actually had packages of individually quick frozen clams on the half shell, they were on the small side, but they were like $6 for a vacuum package of I think 24.

I looked around the frozen seafood in that store last week and they were not there, and today they were up front and center, probably as a featured new product.

I bought fresh ones, so don't have a clue if they are any good or not, just a bit surprised to see them with the other frozen seafoods.

$6 is actually a pretty good price around here, assuming they're any good. I pay $12 for a 2# bag of fresh littlenecks which will contain between 24 to 30 clams.
